Nisin by MP Biomedicals is a high grade reagent. This is a polycyclic antibacterial peptide produced by the bacterium Lactococcus lactis. The reagent is available as a tan powder which is soluble in dilute acids such as 0.02 N HCl. It contains 34 amino acid residues, with some uncommon amino acids introduce by posttranslational modification. Nisin is effective against many Gram-positive organisms, including lactic acid bacteria, Listeria monocytogenes, Staphylococcus aureus, Bacillus cereus, Clostridium botulinum, etc. In the food industry, it is obtained from the culturing of L. lactis on natural substrates, such as milk or dextrose. It is commonly used as a food preservative as E234 in the food industry. It is added to extend the shelf-life of processed cheese, meats, beverages. It is used as a selective agent in cell culture for the isolation of gram-negative bacteria, yeast, and moulds. This is used in bioassays to study posttranslational modification of nisin. Nisin is also employed to study food preservation.
