This reagent is available as a colourless powder which is soluble in water. It acts as a hexadentate ligand and chelating agent, with its ability to “sequester” metal ions such as Ca2+ and Fe3+. After being bound by EDTA into a metal complex, the metal ions remain in solution but exhibit diminished reactivity. EDTA is also added to some foods as a preservative or stabilizer to prevent catalytic oxidative decolouration catalysed by metal ions.
