Gellan gum by MP Biomedicals is a high grade reagent. This is a water-soluble anionic polysaccharide produced by the bacterium Sphingomonas elodea (formerly called Pseudomonas elodea). The repeating unit of this polymer is a tetrasaccharide, which consists of two residues of D-glucose and one of each residue of L-rhamnose and D-glucuronic acid. The discovery and development as a commercial biogum hydrocolloid product is credited to Kelco. Gelrite, gellan gum, is recommended as a gelling agent for use in place of agar in microbiological media. Gellan gum is used in a wide variety of immobilization matricies. It is used in the food industry as E418, where it acts as a thickener, emulsifier, and stabilizer. The benefit of using gellan gum is that the ice cream or sorbet can be set in a dish of flaming alcohol or heated with a propane torch without actually melting. Approximately half the amount of gellan gum is required when compared to agar, to reach an equivalent gel strength, though the exact texture and quality depends on the concentration of the divalent cations present.
